Criollo cocoa has an amazing and unique flavour, a mix of walnut, tobacco, caramel and vanilla. 200 years ago Criollo was the dominant cocoa type, but it proved to be more susceptible to diseases than the Forastero and Trinitario breeds. Nowadays only the highest quality cocoa and chocolate are made from these rare beans. Criollo originates from Mesoamerica and is said to have been popular among Mayan and Olmec civilizations. Its genome has traces of Forastero cocoa from South America. It has lighter colour and taste than other cocoa species.
